Avocado BLT Salad Recipe (Paleo Friendly)

There’s nothing like a cool, crisp salad on a summer day. They’re family-friendly and great for summer potlucks and get-togethers. Summer is the perfect time for them, too, because garden and garden gardens are full of them. farmers markets They are filled with produce.

we don’t do that lots of bread Around here, so I wanted to recreate the flavor of the classic BLT sandwich as a veggie-packed salad. Crispy bacon, sweet cherry tomatoes and a tangy lemon mustard vinaigrette on top of salad greens…it doesn’t get any fresher than that!

BLT Salad: A New Look at a Classic

What is it about a bacon, lettuce and tomato sandwich? It’s so simple but it tastes so good every time. Instead of thin slices of tomato and a leaf of lettuce, how about filling it up with good-for-you veggies?

Making a BLT salad for dinner is a great way to use up garden produce. You can use any green vegetable you like. I like a bit of arugula and baby spinach for B vitamins and iron, plus some romaine lettuce for crunch.

not very much Still a confident gardenerThe cherry tomatoes for this recipe are a kid-favorite garden treasure and are so easy to grow. All you need is a nice big pot, some soil, a stake and string, and some sunshine! Kids love watching them ripen and their natural sweetness goes really well in this salad. Even if you don’t have a lot of space, they make a great pot plant for the balcony or porch.

BLT Toppings

Top the salad with some sliced avocado and creamy goat cheese to mimic the mayo of a traditional BLT. This salad lets you enjoy the flavors of a BLT without the bread and leaves you feeling refreshed and satisfied!

If you like your bacon extra crispy, choose regular or thin slices. If you really want to bring out the bacon flavor, use thick-cut bacon instead! Here are some more topping ideas:

  • chopped fresh chives

  • grated cheddar cheese (substitute goat cheese)

  • chopped red onion

  • home make Grain-Free Croutons

Lunch To-Go

Salads are the perfect dinner for busy days because they’re usually quick and easy to make. Add some shredded chicken for an easy, protein-packed meal. Or put some meat on the grill and serve this BLT salad as a side dish.

I like to make it in advance in mason jars (this is another way they do it) Useful use) are great containers for salads. Just put the wet ingredients (tomatoes, dressing, avocado) on the bottom. Place the salad greens on top and put the lid on. When you’re ready to eat, shake the jar to mix everything up or just pour it onto a plate.

You’ll notice in the instructions that I divided everything evenly onto four different plates. If you prefer you can also put everything into one large bowl and serve it that way. However, not everyone may get exactly the same amount of toppings this way!

BLT with avocado?

Absolutely! Because avocado is both delicious and healthy.

Avocados are one of the most versatile ingredients. They’re delicious on their own but also mild enough to blend easily with other flavors. You’ll most commonly find them mashed into guacamole, but they’re also delicious in soups and salads. I love using them this way Egg-free mayo Or you can even add it to a smoothie!

Avocados are very nutrient-dense And being creamy makes them a good substitute for eggs or dairy in some recipes. They’re also high in fiber, potassium, B vitamins, and healthy fats.

Dressing

Store-bought salad dressings often contain highly refined oil and artificial additives. By making them at home I know my family is getting a good dose of healthy fats and real food ingredients.

Making my own salad dressings is also inexpensive because I already have most of the common ingredients on hand. These include olive oil, various vinegars, and herbs.

Instead of making the dressing myself every time I need it, I save time by making a double or triple batch. (Tip: use dried herbs to keep them fresh the longest.) I store them in a mason jar with a lid and keep them on hand for whenever I need them.

The vinaigrette for this salad is a mixture of lemon juice, olive oil, Dijon mustard, honey and a little salt and pepper. It is quite tangy and would also work well as a marinade for chicken or fish. Pour it into a mason jar and shake it up and refrigerate any leftovers for another day.

Homemade Ranch Dressing

I was very fond of the store-bought ranch dressing. As much as I love this salad with a tangy vinaigrette, it tastes just as good Ranch dressing. Instead of buttermilk or sour cream, my version uses Greek yogurt for a protein boost. So if you’re not a fan of vinaigrette, try it with ranch instead!
