Caramelize the onions and tomato paste. This is a must-do task, it takes a few minutes but it’s well worth the time. Cooking the onions adds a lovely sweetness, and caramelizing the tomato paste until it turns from bright red to brick-red softens its acidity. Doing this step together also helps to mellow out the flavor of these ingredients.

Chop fresh cherry tomatoes. I like to add cherry tomatoes to the sauce just before the pasta is cooked and heat them until they start to burst. To maintain texture in the sauce, I don’t mind keeping the tomatoes mostly whole. However, to balance the flavor, I do crush a few of them by bruising them. This releases some of their sweet flavor and creates a chewy texture.

Serve the sauce with sun-dried tomato oil or butter. Once the sauce is ready, I add a little more oil or butter from the jar of sun-dried tomatoes to make it more smooth and silky. It also adds a warm and toasty flavor to the sauce.

  • 2 Pasta serving of choice
  • 1 large onion, finely chopped
  • 5 , 6 sun-dried tomatoes in oil, finely chopped
  • 3 tablespoons tomato paste
  • 10 Ounce cherry tomatoes
  • For serving: basil, Parmesan, red pepper flakes

  1. Bring water to a boil in a large stovetop pot. Add pasta and cook according to package directions.
  2. While the pasta cooks, prepare the sauce. In a large stovetop pan, add 2-3 tablespoons of sun-dried tomato oil. Add the onion, chopped sun-dried tomatoes, and tomato paste. Cook for a few minutes until the tomato paste turns brick red and the onion caramelizes. Add the cherry tomatoes and cook until they begin to burst.
  3. Add the pasta water to the tomatoes and cook until the sauce thickens. Finish the sauce with a little sun-dried tomato oil or a slather of butter.
  4. Add the pasta to the sauce and cook until the sauce coats the noodles.
  5. Serve hot with desired toppings. Enjoy!
