Watergate Salad

I realize we play fast and loose with the word “salad” sometimes here in the Midwest, but this is a classic and I stand by it! Watergate Salad is a cold, dessert-type salad made with marshmallows and Cool Whip. For me, it’s a staple of any backyard barbecue or holiday dinner. I have great memories of this green, creamy salad on plates with things like Thanksgiving turkey or BBQ chicken. Don’t knock it until you’ve tried it!

Some people also call this Watergate Salad recipe by other names like Pistachio Dessert Salad or Pistachio Fluff. The name Watergate Salad comes from the fact that this side dish has the same ingredients and flavor as Watergate Cake. And both dishes were, as you guessed, created at the time of the Watergate scandal.

Material

  • Pistachio Pudding Mix
  • crushed pineapple with juice
  • Mini Marshmallows
  • Walnuts – or you can use other nuts
  • Cool Whip – or you can use fresh whipped cream

I like to serve it with some maraschino cherries on top but that’s optional.

  • Watergate Salad is best the day it is made. And leftover food can become soggy after a day or two, even when stored well.
  • I usually use regular (vanilla?) mini marshmallows for this recipe, but if you want to add more fruit flavor you can use Fruity Mini MarshmallowsSimilar to ambrosia salad.
  • I will sometimes reserve 1/4 cup or more of Cool Whip to add on top of this salad for a prettier presentation, but it is not necessary.
